For the month of August “Heiße Liebe” will be our feature dessert at PeakFine.
The recipe is quite simple and the flavors blend together wonderfully. Pastry Chef Justine follows suit to stay true to Executive Head Chef Romaine Newell’s constant mission of fresh made in-house dishes and whips up a house made warm raspberry sauce to pour over a soft scoped Vanilla bean ice cream that will have your taste buds dancing. This velvety dessert “Hot Love” originates from Europe and is also a known favourite in Austria.

The list of ingredients required is Vanilla Ice Cream and Raspberries.
To achieve your raspberry sauce, in a saucepan over medium heat, stir together 1 1/2 cups raspberries, sugar and water until the sugar is dissolved. Heat the mixture to boiling, stirring often. Reduce heat and add the vanilla. Some off season/frozen berries may be more bitter compared to seasonally fresh sourced berries.

We would like to give you pleasure of being able to layer your ice cream with just the right amount of raspberry sauce. Enjoy as you wish with a final little pop of color in your garnish of choice.
Edible flowers provided by our amazing local farmer from Simple Life Farms are always a lovely show stopper for sweet plate.
