FARM TO TABLE – HEALTHY, VEGETARIAN FALAFEL
Made to Order: Healthy, Vegetarian Falafel
Falafel is one of my favorite items for a quick and incredibly healthy vegetarian lunch or dinner. An excellent source of vegetarian protein, the chickpea mixture is delicious in a wrap, or served with salad and your choice of toppings like Tzatziki.
Keep in mind: your Falafel wrap/sandwich remains healthy only if you use common sense with your toppings. Keep it light and fresh, and you will enjoy the benefits.
Washed & Chopped Parsley
Washed & Chopped Cilantro
Peeled Yellow Onion
Toasted & Ground Cumin
Toasted & Ground Cumin
Chana Flour (Chickpea/Garbanzo flour available at most supermarkets and health food stores)
Add everything except the Chickpeas and Chana flour in a mixing bowl or blender, and blend until smooth.
Add chickpeas and grind until fine.
Combine all ingredients and make adjustments with Chana flour and seasoning – the mixture should look like a firm paste.
Serve by placing ½ cup of the mixture in a wrap or spread over multi-grain bread, or top over baby organic greens with grilled pita bread.
