As the blue skies embrace the rolling green hills with Okanagan sunshine, Chef John Stratton and the culinary team at Sparkling Hill have been working on some very exciting new dishes and flavours. With spring upon us and summer around the corner it’s the perfect time to release our summer menu, inspired by the beautiful Okanagan and all it has to offer from tender green leafy lettuces, sun ripened tomatoes, juicy fruits and free-range chicken, it was almost a challenge to pick only a few items to put on the menu. in the end we came up with a well-balanced menu that reflect the long sunny days the Okanagan has to offer.
The menu has something for everyone, from BBQ inspired dishes like our Smoked veal chop with torched cipollini onions, corn puree, asparagus and roasted tomato demi-glace to give you the feel of backyard summer BBQ. The Beef tenderloin with a creamy warm BC fingerling potato salad, local daily vegetables and rotating seasonal mushrooms, our beautiful Black Cod, sustainably farmed right here on the west coast paired with Okanagan peach butter, fresh shaved vegetables, local herbs and greens topped with a aromatic dukkah crust it’s the prefect hot summer evening dish to help highlight all that British Columbia has to offer.
Join us for casual dining at Barrique & Java between 11 a.m. and 11 p.m. daily, offering light fare that is sure to tempt your taste buds. Happy hour highlights an array of cocktails, beer, spirits and hi-balls from 4 p.m. to 6 p.m. and again from 9 p.m. to 11 p.m.
